Chocolate cake

Cakes
125 g butter
150 g sugar
150 g brown sugar
2 eggs
260 g flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
40 g cacao
2 dl milk

Buttercream icing
500 g powdered sugar
1 egg
60 g cooca
80 g butter
1-2 tsp vanilla extract
2-4 Tbsp strong coffee

Baking parameters
180°C for about 20 min.

Cakes
4.5 oz g butter
5 oz sugar
5 oz brown sugar
2 eggs
9 oz flour
1 tsp baking soda
1 tsp baking powder
1/2 tsp salt
1.4 oz cacao
7 oz milk

Buttercream icing
17 oz powdered sugar
1 egg
2 oz cacao
3 oz butter
1-2 tsp vanilla extract
2-4 Tbsp strong coffee

Baking parameters
350F for about 20 min.

Cakes
Beat together butter and sugar until very well mixed.
Add the eggs, one at a time.
Mix the dry ingredients together (sieving the cacao) and add to the mixture along with the milk.
Pour in 2 baking pans and bake for about 20 min.

Buttercream icing
Melt the butter.
Add the melted butter to the mixture of other ingredients and mix well.

Comments:
This recipe is a classic one.  It tastes well and never fails. If covering the cake with royale icing, I always use the buttercream icing underneath.  All of my childrens birthday cakes are made from this recipe.

Chocolate fudge cake

Cake
4 eggs
2 dl sugar
200 g butter
200 g chocolate
1 dl flour

Butter-chocolate cream icing
150 g chocolate
70 g butter
1-2 Tbls syrup

Baking parameters
170°C for 30-40 min.

Cake
4 eggs
7 oz sugar
7 oz butter
7 oz chocolate
3.5 oz flour

Butter-chocolate cream icing
5.3 oz chocolate
3 oz butter
2 Tbls syrup

Baking parameters
350F for 30-40 min.

Cake
Beat together eggs and sugar until fluffy.
Melt carefully the chocolate and butter together and cool down a little bit.
Add the chocolate mixture to the sugar-eggs blend and mix with a spatula.
• Add the flour and mix with the spatula.
Pour in one baking pan covered with a baking sheet and bake at 170°C/ 350F for 30-40 min.

Butter-chocolate cream icing
Melt all the incredients together and mix well.
• Pour over the cake when it has cooled down.

Comments:
This recipe is also a classic one. It's very easy to make and is delicious.  You can make it either a day in advance or just before serving.  If eaten just out of the oven the icing may be dismissed.  An ice-cream or whipped cream is a must with this cake.  The texture of the cake is depending on the baking time.  It may vary between ovens.

Marengue cake

Cake (2)
4 egg whites
200 g sugar

Whipped cream
1/2 liter heavy cream

Baking parameters

150°C for 60 min.

7 oz sugar

Whipped cream
8 oz heavy cream

Baking parameters

150°C for 60 min.
Cake
Beat together egg whites and sugar until light and fluffy.
Make circles on a baking sheet or cover two baking pans with baking sheets.

Whip the cream and put between the to marengues. You can add strawberries or any other kind of berries in the whipped cream.  There is also a possibility to add some kind of candy to the whipped cream like f. eks.chocolate raisins.  On top you can add strawberries, melted chocolate, candy or whatever you can think of.

Comments:
 This is just a basic recipe.  There are a lot of variables available as described above.  You can mix 50/50 white and brown sugar.  It gives a little different taste to the marengue.  Use your imagination and make a great hit to your party.

Cheese cake

Botton layer
10 oz Oaty buscuit with chocolate (F. eks HobNobs).
Orange juice

Cheese mixture
150 g powdered sugar
250 g cream cheese
1/2 liter heavy cream
About 300 g Kit Kat or similar candy

Berries on top.

Baking parameters

No baking, just refrigerating.

Botton layer
10 oz Oaty buscuit with chocolate (F. eks HobNobs).
Orange juice

Cheese mixture
5.3 oz powdered sugar
9 oz cream cheese
17 oz heavy cream
About 10 oz Kit Kat or similar candy

Berries on top.

Baking parameters

No baking, just refrigerating.

Botton layer
The cracker is put in a blender and a few Tbs of orange juice added.
Put in a baking pan.

Cheese mixture
Mix very well together the cream cheese and the powdered sugar.
Whip the cream.
Mix very well with a spatula the whipped cream and the cream cheese blend.
Mashed candy is added to the blend.
The blend is put on the botton layer.

Strawberries or other berries on top.

Comments:
 This is a very easy cheese cake.  The candy available may differ.  Some cracker-like chocolate candy taste well in this recipe.  The cake can be decorated in may ways.

Fondant

1 large cup Marshmallows
1-2 Tbls water
1 1/2 - 1 3/4 cups powdered sugar
  • Put the Marshmallows in a cup and press down.
  • Place the cup in a large bowl and microwave for 30 - 60 seconds.
  • Pour the melted Marshmallows from the cup to the bowl and stir with a fork.
  • Add the powdered sugar and knead.
  • Color and flatten out as desired.
Comments:
The melted Marshmallow blend looks like a thin soup.  Microwave for a few seconds more if needed.
In the recipe I got recommended kneading by hand.  I nevertheless, always use my Kitchen-aid.
